2. A VEGAN DIET WILL SAVE OUR WORLD

Einstein tells us: “Nothing will benefit human health and increase the chances for survival of life on Earth as much as the evolution to a vegetarian diet.”

The change in the condition of our world proves the truth of his statement. The situation was much different my first years of life, which were spent on a farm in western Oklahoma. Our cattle and sheep fed on pasture land, chickens roamed all over the yard and laid eggs in nests in the chicken house. The cows and sheep loved their babies and took perfect care of them. Ultimately, many of the animals went to the slaughterhouse, which I wish had never happened, but they had a good life until that day. Even so, their end was tame in comparison to the way animals are killed now.

We ate the produce of our farm—the milk, eggs and meat—but it was much healthier than what is available today. Also, we had many more meals of potato soup than we had with steak and gravy. There were no hormones given to make the animals produce and grow, no pesticides sprayed on the grass and other feed they ate, and no antibiotics ever used.

Today the majority of our cattle, sheep, pigs and poultry are raised in factory farms in overcrowded places where they can hardly move. Their only purpose is to be food for humans, so they are given hormones and antibiotics to make them produce far more than normal. Pesticides are used in abundance on their grain. Their lives end horrendously as they are shipped to slaughterhouses where millions of each species are killed daily.

Einstein’s words ring true as we read about the destruction of our land, water and air because of our animal industry. Chemicals and fertilizers are poured into the land to produce grain of which 70 percent is fed to animals. Water is polluted with the runoff from these chemicals. Cities are running out of water. It takes about 50 times more water to produce a pound of beef than to produce a pound of potatoes. Even our air is not escaping the corruption as animals belch more methane into the air than our transportation system puts in.

Another sad commentary is that millions go to bed hungry every night. Authorities tell us we could feed the world if we would quit feeding our grain to livestock. Not only are the lives of our factory farm animals miserable, but eating their meat, milk and eggs is killing us. One of the main causes of our major diseases of heart trouble, cancer, diabetes and obesity is the high-fat, no-fiber content of animal products.

Hopefully these facts and Einstein’s statement will inspire all to continually reduce  intake of animal products, thus SAVING OUR LAND, SAVING OUR WATER AND SAVING OUR HEALTH!

MILLET SANDWICH SPREAD
Blend:
4 1/4 c tomato juice
1/2 c raw sunflower seeds
Pour the blended mixture into a pan. Add the following
ingredients and simmer on low heat for one hour.
1 c uncooked millet
1/3 t sage
1/2 t celery powder
1/2 t garlic powder
1/2 t cumin
1/2 t salt
Stir in 1/2 c chopped pecans or walnuts and
1/2 c chopped olives. Cool and spread on whole
wheat bread. Top with  your favorite sandwich fixings.
